Best Banana Bread

Now that Miss USA is over, and I will not be competing in another pageant….. I have been back in the kitchen baking and cooking. One of my favorite things to make is banana bread. If you know the relationship I have with my dad, you know that he absolutely loves banana bread so I try to make him banana bread almost every-time I see him. Below is the recipe that is my favorite and easiest to make. I hope you enjoy!

Ingredients

1/3 C. Melted Butter

3 Ripe Bananas (the more ripe the better)

1 Tsp Baking Soda

Pinch of Salt

3/4 C. Sugar (closer to 1 C if you like it sweeter)

1 Lg Egg - Beaten

1 Tsp Vanilla

1 1/2 C. Flour (swap for Almond Flour if you are Gluten Free)

2 Tbs Milk (I use Almond Milk because that’s what I drink & buy, but you can use either)

1 Tsp Cinnamon

Optional

1 C. Pecans or Walnuts

1 C. Chocolate Chips

(Makes 4 small loafs)

Directions

  1. Preheat Oven to 350 Degrees

  2. Butter or non-stick stray your 4 small loaf pans

  3. Mix together bananas and melted butter (I like to make life easy, and use my Kitchen Aid mixer)

  4. Combine the sugar, baking soda, and salt in a different bowl. While the mixer is running add in the beaten egg and vanilla to the banana mixture. Next add the sugar, baking soda, and salt to the banana mixture, do this while your mixer is still running so everything is being mixed together very well.

  5. Add flour and cinnamon to the banana mixture

  6. Last add your milk

  7. Pour batter evenly into your small loaf pans. If you wanted to make variations of banana bread, add your optionals to all of the mix or maybe to just a few of the small loaf pans. My dad loves pecans or walnuts in his banana bread so I always add them in the loafs that I take to him.

  8. Bake for 30-35 minutes or until a toothpick comes out clean when inserted into the middle of the bread.

  9. Store leftovers in the refrigerator.
