Did Someone Say Vegan Rice Krispy Treats?!
If there is ever a reason to celebrate, without a doubt I’m totally in, and I’m bringing food. I believe cooking is one of my love languages. I love nothing more than whipping up something super yummy for the ones I love. That being said, I have recently been getting more creative in the kitchen because I have a Vegan friend and a Gluten Free Vegetarian friend. I always want everyone to feel so welcome when they come over to eat, and hang out which means ensuring everyone has something to eat. This recipe below came about as a creation for my friend Hannah, when I realized one day that she couldn’t have Rice Krispy treats…….. until now that is.
Ingredients
1/2 C Raw Honey (I like mine from the farmer’s market)
1 C Nut Butter ( I used Almond Butter, but choose what you like)
1/2 Tsp Vanilla Bean Powder
5 C Rice Krispies
Optional
1/2 C Vegan Chocolate Chips
Directions
Combine raw honey, nut butter, and vanilla bean powder in a large microwavable bowl. Microwave for 30 seconds, make sure to mix up the ingredients. Now add your rice krispies and vegan chocolate chips. Mix everything thing together until it is very sticky. Line a 9x9 pan with parchment paper. Scoop your rice kripsy mix into the pan, and press down evenly with a spatula. Place in the fridge for at least an hour until the rice krispies have hardened, cut and enjoy.
